Gunpowder is rolled from the small leaves of the tea bush after picking and drying. The traditional method of rolling young tea leaves is particularly laborious, but these little green pearls retain the tea's aroma better than any other green tea. When water is poured over the Gunpowder tea leaves, they rise to the surface of the cup, and during brewing they dignify to the bottom of the cup, opening like the petals of a flower, coloring the water a beautiful green at the same time. Some say the tea pops like gunpowder during brewing.

Legend has it that this tea got its name from a young English tea merchant's assistant who had mentioned that these tiny little rolled bug tea balls resembled gunpowder. Gunpowder was one of the first Chinese export grades in the early 18th century and was one of Emperor Kang Xi's favorite grades of tea.
